Poulet Yassa

Ingredients:
Chicken, cut into serving pieces — 2-3 pounds
Onions, thinly sliced — 4-6
Hot chile pepper, minced — 1-3
1. Add all the ingredients except for the oil to a large non-reactive bowl and mix together. Refrigerate and marinate for at least 4 hours, preferably overnight.
2. Remove the chicken pieces, wipe dry, and grill, broil or sauté them until well browned. Set aside.
3. Heat the oil in a large pot over medium flame. Remove the onions from the marinade and add them to the pot. Sauté for 8-10 minutes until they are well wilted and starting to brown.
4. Add the rest of the marinade and the browned chicken pieces to the onions, reduce heat to medium-low heat and simmer until cooked through and tender, about 30-40 minutes.
5. Adjust seasoning and serve with rice, fufu or couscous.
Variations
*Poisson Yassa: Substitute 2-3 pounds of firm fish fillets for the chicken. Marinating time only needs to be 30 minutes to an hour in this case. Grill the fish and sauté the onions. Then simmer the marinade without the fish for 10-15 minutes. Finally, add the marinated grilled fish and simmer for 10 minutes more.
*Sometimes vegetables are added to the pot to stretch the meat and add more flavor. Add 2-3 chopped carrots, 1/2 head of chopped cabbage or a handful of green olives when you bring the marinade to simmer.
*Half of the lemon juice can be replaced with vinegar. Cider vinegar works well.
*Cubed lamb or mutton may be substituted for the chicken. The dish will need to cook a bit longer for the meat to become tender.
Sweet Potato Cake (Martinique)

Ingredient:
2 pounds (896 g) sweet potatoes, peeled, thickly sliced
2 tablespoons (1 ounce, 30 ml) butter
3/4 cup (6 ounces, 168 g) brown sugar
1/4 cup (2 ounces, 60 ml) dark rum
1/2 cup (4 ounces, 120 ml) milk
2 teaspoons lime rind, grated
1 tablespoon (1/2 ounce, 15 ml) lime juice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 teaspoons baking powder
1. Preheat oven at 350°F (176°C)
2. Cook sweet potatoes in just enough water to cover until tender, 20 to 25 minutes. Drain and mash.
3. While still warm mix in butter, sugar, and rum.
4. Beat in eggs, one at a time.
5. Add milk, grated rind, and lime juice.
6. Sift together cinnamon, nutmeg, salt, and baking powder. Add to sweet potatoes and mix thoroughly.
7. Pour into a greased 9 × 5-inch (22.5 × 12.5 cm) loaf pan.
8. Bake at 350°P (176°C) 1 hour or until a cake tester comes out clean.
9. Let cool 5 minutes, then turn onto a rack to cool.
Meat loaf

Ingredients:
2/3 cup dried breadcrumbs, soaked in
1 cup milk
1 1/2lbs ground Beef
2 eggs, slightly beaten
1/4 cup chopped onions
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon sage
Glaze:
3 tablespoons brown sugar
1/4 cup ketchup
Directions
Combine meatloaf ingredients. Put in loaf pan. Top with glaze. Bake at 350 degrees for 45 minutes or until no longer pink in center.
Meat Balls

Ingredients:
1 1/2 lbs hamburger
3/4 cup milk
1 small Onion
1 cup breadcrumbs
salt & pepper
flour
Sauce:
1 1/2 cups catsup
1 cup water
1/2 cup Sugar
1 tablespoon A-1 Steak Sauce
3 tablespoons white vinegar
1 tablespoon worcestershire sauce
Directions
Mix sauce together in crock pot. Then mix meatball ingredients together and roll in flour. Brown, and add to crock pot. Let cook for a few hours on low.
Mushroom Appetizers

Ingredients:
3 tablespoons butter
1 cup sweet onions, chopped fine
2 cups Mushrooms, chopped finely
1 cup mozzarella Cheese, grated
1/4 cup Parmesan cheese
1 teaspoon parsley flakes
1 large egg, beaten
1/2 teaspoon oregano
12 slices square bread, crusts removed (white or whole Wheat, I prefer the whole Wheat)
1/3 cup butter, softened
3 slices Kraft processed cheese slices
Directions
-Melt butter in a large fry pan and add the onions and Mushrooms, Saute until soft.
– Add mozzarella, parmesan, parsley, egg,salt& pepper, cook for 1 minute and remove from heat.
– Roll each crustless slice of bread to flatten it, butter each piece and cut each slice into 4 square pieces.
– Press bread pieces, the buttered side down, into a tiny muffin tins.
– Fill with Mushroom mixture (about 1 1/2 tsp to each tartlet).
– Cut the 3 Cheese slices into 16 pieces so you will have 48 pieces and put a piece on top of each tartlet.
– Bake in 350f oven for 20 to 25 minutes.
Cheese Cookie Snacks

Ingredients:
1 cup shredded Cheddar Cheese (4 oz.)
1/2 cup butter or margarine, softened
1 cup all-purpose flour
1/4 teaspoon salt
1 cup crisp rice cereal
Directions
– Stir together Cheese and butter until blended.
– Stir in flour and salt; blend well.
– Stir in cereal.
– (Dough will be stiff).
– Shape dough into 1 inch balls; place on an ungreased baking sheet 2 inches apart.
– Flatten cookies to 1/4 inch thickness with a fork, makiing a crisscross.
– Bake at 350* for 15 to 18 minutes.
– Remove to wire rack to cool.
– Store in an airtight container.
