Here is a Senegalese stew recipe I found, can’t vouch for how good it is, obviously you’d have to omit peanuts.
3-4 tbsp (peanut) oil
2 lg onions finely chopped
1 chili chopped, or 1 tsp chili powder, or 1tsp ground ginger
1 lb potatoes quartered
1 sm turnip chopped coarsely
2 lg carrots sliced
1 c pumpkin peeled and cubed
1 c water
1 c tomto paste
1/2 lb cabbage stew
1 c leafy greens (spinach)
2 lg tomatoes quartered
(1 c peanut butter)
brown onions and add chili – potatoes and turnip, cook for 10 min, add carrots and pumpkin, cook another 10 min – mix water and tomato paste, add to veggies – bring to boil, then simmer until nearly done – add cabbage and greens and tomatoes, season
(when cooked remove 1/2 c of broth and mix w peanut butter and add to pot) – simmer for another 10 min – serve w rice
salt and pepper
